Grass jelly originates from Asian countries and is available in two types – green and black. The Mesona palustris plant produces the main ingredient needed to make black grass jelly, while the Cyclea barbata Miers plant is needed to make green grass jelly. This plant is part of the mint family and is picked in spring and left to dry. After drying, it is boiled until it forms a thick substance to which starch is added, thus producing a gelatinous food called grass jelly.
